If it was an animal, it'd most likely be P-Monkey...especially since he was already "open" and would require less work. But I don't think they'd bug the animals. That's too easy to get around. My guess would be the car. They know neither of you can rent a car, and you can't exactly travel far without one. Plus, it'd be way harder to find a bug in a car than in a stuffed animal.

Even if it's not bugged, I'd imagine they have your liscence plate number and a description of your car, and probably connections to the authorities. You're too easy to track with that darn thing. Do you have a friend who would be willing to car-swap for a while? At the very least, I'd recomend that the next time you move you park at a different motel nearby, and wait to see where the Watchers show up. If they go to the place with the car, then it's the car...if they come to you again, it's the animals...at least then you know.
