bethy: tempting to try...but i'm trying to lose weight! damn all of you! lol

Copycat Twinkies

Ingredients
Cake:
16-Ounce Box golden pound cake mix (disregard mix instructions)
4 egg whites
2/3 cup water

Filling:
2 tsp Butter
1/3 cup vegetable shortening
1 cup powdered sugar
1/4 cup granulated sugar
1/3 cup evaporated milk
1 tsp vanilla extract
2 drop lemon extract


Instructions
Note: (You will need a spice bottle (about the size of a Twinkie), twelve 12 x 14-inch pieces of aluminum foil, a pastry bag and a toothpick)

Preheat oven to 325 degrees F.

Fold each piece of foil in half twice. Wrap the folded foil around the spice bottle to create a mold. Leave the top open for pouring the batter in. Make twelve of these molds and arrange on a cookie sheet. Grease the inside of each with nonstick spray.

Disregard the directions on the cake mix box. Instead, beat the egg whites until stiff. Combine with cake mix and water, and beat until thoroughly blended (about 2 minutes).

Pour batter into molds, filling each about 3/4 inch. Bake in preheated oven for about 30 minutes, or until the cake is golden brown and a toothpick comes out clean from the center.

For the filling, cream the butter and shortening. Slowly add the sugars while beating.

Add the evaporated milk, vanilla and lemon extracts.

Mix on medium speed until completely smooth and fluffy.

When the cakes are done and cooled, use a toothpick to make three small holes in the bottom of each one. Move the toothpick around the inside of each cake to make room for filling.

Using the pastry bag, inject each cake with filling through all three holes.

DISNEY TIRAMISU TWINKIE RECIPE

This recipe for Twinkie Tiramisu is the same as is served in Classic Hall at Disney's Pop Century Resort, alongside such sentimental favorites as Fluffernutter Sandwiches and Tie-Dyed Cheesecake.

INGREDIENTS:
For the Espresso Syrup:
1/3 cup water
1/2 cup sugar
2/3 cup strongly brewed espresso coffee
1/4 cup Italian or domestic brandy (optional)
For the Mascarpone Filling:
1 1/2 cups heavy whipping cream
1/3 cup sugar
2 teaspoons vanilla extract
1 pound mascarpone cheese, softened to room temperature
Other Ingredients:
12 Twinkies, sliced 1/2 inch thick
Cocoa powder, for garnish
PREPARATION:
For the Espresso Syrup:
1. Combine water and sugar in a small saucepan.
2. Bring to a simmer, stirring occasionally to dissolve sugar.
3. Remove from heat, cool and add coffee and brandy.

For the Mascarpone Filling:
1. Whip cream with sugar and vanilla until soft peaks form.
2. Fold cream into softened mascarpone.

To Assemble Twinkie Tiramisu:
1. Place a layer of the Twinkie slices in the bottom of a shallow 2-quart baking dish or gratin dish.
2. Drizzle with half of the Espresso Syrup.
3. Spread with half of the Mascarpone Filling.
4. Repeat with remaining Twinkie, syrup, and filling.
5. Smooth the top with a metal spatula.
6. Cover with plastic wrap and refrigerate for up to 24 hours.
7. Just before serving, sift cocoa to lightly dust the top of the tiramisu.

I prefer Image but they are awfully hard to find.

I haven't had a twinkie in years (which is probably for the best). They aren't twinkies, but I used to love those Little Debbie cakes filled with banana-flavored cream.

Wielder of Twinkies! Heh, that was probably me. Fun times. :)

mmm little debbie.

I dont eat a lot of stuff like that, but once in a while I will get a craving for one.

The 99 cent store that I go to sells a big box of little debbies.... actually quite a few varieties of them.


I used to know this one guy in middle school who ate twinkie sandwiches. Seriously, two slices of bread with a twinkie and chocolate syrup in the middle. ick.

YUM! I remember I used to eat those like almost everyday! I LOVED THOSE!

Edit - I agree, these are better because they lack the nasty, waxy frosting.
