I'd say it's safe to assume that most of the videos are shot pretty close to the time we're told they're shot. Seeing current issues of magazines and comic books in scenes has shown us that before. The Order is actually good, and so Gemma was working for the Order to try and save their chosen one from evil. The surveillance cameras in Bree and Daniels rooms were going to be used to ensure that they were kept safe at night and not killed in their sleep (well... so long as Bree and Daniel went home... which is what Gemma was trying to get them to do). 2. Something bad was happening to the Order (an evil society... which includes Jonas... was trying to bring them down), and Bree's parents got put into a protection program by the Order and Bree, who had already scrammed with Daniel, was told to stay with him as he was the only one who could protect her. And this bad event coincided with Bree refusing to do the ceremony... so this whole time we thought the Deacons were angered at Bree and trying to force her into it, what they really said (which caused Bree's parents to be scared and put into hiding) was that these Grigori (or whatever they are) are planning something bad... So that is my two cents given the info as I understand it. I just had to get those ideas down out of my head.
